Sausage and Greens Frittata 1 lb breakfast sausage mushrooms one box power greens 8 eggs salt pepper Heat oven to 350. Brown the sausage in a frying pan that can go in the oven (no plastic).  Add in mushrooms and greens and stir around for a minute or two. Scramble the eggs with salt and pepper. Pour the egg mixture over the sausage and veggies. Swirl it around to cover everything. As soon as the eggs start to firm up around the edges, transfer the pan to the oven. I cook it for about 15 minutes.  Slice the frittata in pieces to easily be heated for breakfast. One frittata feeds my family of four for two days.
